The soy sauce is only brewed during the coldest and harshest winter months of January to March in the Hokuriku region.
The ingredients used in this handcrafted soy sauce are locally sourced from Toyama Prefecture, including soybeans from Oyabe City, wheat from Takaoka City, and Shimamaasu from Okinawa Prefecture.
The koji (fermentation starter) is produced in a rare brick-built koji room, and the koji is carefully prepared in wooden boxes called "kojibuta."
